THIRST: When we are thirsty we like to make a big pot of green Japanese tea, the two of us use a one liter gongfu teapot. We use 5 grams of green Japanese tea, pour 2 times and press immediately. The third brew we let steep for 3 minutes. So we finally have 900 ml of tea! which has not become too strong and too bitter, and is easy to drink. The sencha Fukamishi is very tasty this way, the tea is prepared nice and fast, and you get the most out of your tea without having to wait or running the risk that your green tea will become pale in taste.
TASTING & TESTING: We use a small 100ml teapot for this, we don't want to drink too much or waste it. In this case we use 1 gram of tea and a steeping time of 3 minutes.
GET EVERYTHING OUT OF IT: When we really want to get to know a tea well, we start with a small gaiwan, which means short brewing times and more frequent pouring.
WITH LUNCH: An old-fashioned pot of black, red tea, preferably from India or Nepal. The dose is 1 gram per 100ml and let it steep for a long time, 5 to 7 minutes.
